The Healthy Pastelillo

Back in 2008 and then later again in 2009, myself and my friend Lisa from the Nifty Thrifty Stylist Closet and her many other blogs went on a search (read: web search) for healthy empanadas (pastelillos in Puerto Rican . . lol). We just KNEW there HAD to be a way to eat these delicious latin appetizers without frying. Here is some of what we learned:

And lastly a tip:

Preheat oven to 350 degrees F (180 degrees C). Place empanadas on a parchment paper lined baking sheet. Be sure to prick each empanada with a fork near the curl to allow steam to escape during baking. Glaze with egg for shine and bake until golden, about 20 to 30 minutes."

I NEVER FOUND THESE SO CALLED BAKING "DISCOS." I pretty much gave up UNTIL another web search last month brought me to this site: Healthified Pastelillos. One Bite At A Time with Shayne shows you how to make beef empanadas with veggies and how to bake the regular Goya Discos sold in the frozen food section of your supermarket. 

 

I have used this recipe TWICE and both times to much success EVEN amongst some really hardcore Puerto Ricans. The filling tastes great with all the fresh ingredients and the discos don't dry up or harden up as I had suspected. I'll take pics the next time I make it. I just couldn't wait to share this recipe with you.
