They don't call it a superfood for nothing. A couple years ago, a good friend of mine put me on to quinoa. I stopped eating it for awhile, until recently. (So hipster-like of me.....lol)
I'm now having a love affair with quinoa.
For those of you who don't know what I am talking about. Quinoa is a "grain-like crop." This means it's not a grain at all. It's actually an edible seed that is added to many dishes to replace rice.
"But rice is yummy, why would you want to REPLACE it?"
Well, quinoa is a COMPLETE PROTEIN. While most grains are missing some essential amino acids, quinoa is high on many nutrients. It's also gluten-free, rich in fiber, and versatile. I've found so many quinoa recipes and tasted it in several different creative meals but my favorite is quinoa pilaf with cranberries from Whole Foods. It's yummy and good for you.
