Beet and Freekah Salad

Last week, I received this recipe from Blue Apron and it was so delicious, I just have to share it with you.

Ingredients call for:

  • ½ Cup Cracked Freekeh
  • 2 Ounces Arugula
  • 12 Ounces Golden Beets
  • 1 Fennel Bulb With Fronds
  • 1 Granny Smith Apple
  • 3 Tablespoons Walnuts
  • 2 Tablespoons Red Wine Vinegar
  • 1 Shallot
  • ½ Cup Crumbled Goat Cheese

I love beets and Golden Beets have proven to be less messy and more delicious than the more popular red or purple beets. These don't stain which is a big win in my kitchen. Definitely a great dish to bring to a potluck for a healthy, but yummy side.
